Different types of freestanding cooktops
Induction
An induction cooktop heats up the pan with a magnetic field. As a result, the cooktop itself doesn't get hot, but the bottom of the pan does. This heats up your food faster and you'll consume less energy this way.
Gas
If you cook on gas, you cook by feel. Thanks to the size of the flame, you can see exactly how high the heat is. Some cooktops have a wok burner. With this powerful burner, you can prepare food on high heat.
Ceramic
A ceramic cooktop heats up because of the heating element that turns red. Because there's no gas and fire, it's safer to cook with than with gas. The cooktop does stay hot longer and it takes a lot of time to heat up.
