Temperature contro
Classic I: standard Top Vent
The Kamado Joe Classic I gives you control over the temperature you grill with. That's because it has a standard Top Vent ventilation system. It's located on the top of the barbecue and consists of a rotatable disc with multiple air holes. You can turn the disc to open it and adjust the amount of air that enters the barbecue.
Classic II: Kontrol Tower Top Vent
With the Kamado Joe Classic II, you have more control over the temperature and heat distribution in the barbecue. This allows you to grill more different dishes at both high and low temperatures. That's because the Classic II has a Kontrol Tower Top Vent ventilation system, unlike the Kamado Joe Classic I. This provides better temperature control. The temperature control doesn't change when you open and close the lid, which does happen with standard ventilation grids.
Classic III: Kontrol Tower Top Vent and charcoal basket
The Kamado Joe Classic III has the most accurate heat distribution of all models. In addition to the Kontrol Tower Top Vent, the Classic III has an included stainless steel charcoal basket. Place the basket in the fire basket to improve the oxygen flow. This allows you to control the temperature more easily and to smoke dishes. It also makes the barbecue easier to clean, because you can remove the charcoal basket and charcoal out of the barbecue in one go.
Lid
Classic I: without Air Lift hinge
If you want to flip a piece of meat, you have to open the lid of the Kamado Joe Classic all the way. As a result, you lose a lot of the heat inside of the barbecue. Want to prevent this? Hold the lid at the desired height. Due to the ceramic material, this can be quite heavy. The edge of the lid is made of felt, which ensures a soft closure of the lid and protects the material of your barbecue.
Classic II and III: with Air Lift Hinge
The Kamado Joe Classic II and Classic III have an Air Lift Hinge system in the lid. This way, you can open the lid at every desired angle without having to hold it yourself. You lose less heat as a result when you check on your food and flip it. In addition, the edge of the lid is made of fiberglass. This material retains heat extra well. It also has a longer lifespan than felt.
Preparation methods
Classic I and II: 2 heights and no SloRoller
Both the Kamado Joe Classic I and the Classic II have a grill rack with 2 different heights. This way, you can grill both directly and indirectly. Put a piece of meat at the low height close to the fire and grill at a high temperature, for example. Want to slow cook a piece of meat or vegetables? Place the food at the top rack, further away from the fire. You can use the 2 different grilling levels at the same time, because the racks are shaped like a half moon.
Classic III: 3 heights and with SloRoller
Compared to the Classic I and II, the Classic III has 3 different grilling levels. This way, you can determine how close to or far away from the fire you place your food even more accurately. In addition, the Classic III includes a SloRoller. If you grill at a low temperature, the SloRoller ensures a good heat and smoke distribution in the barbecue. This has the same effect as a smoker.
Conclusion
Go for the Classic III for complete control over the heat distribution and many grilling options, including smoking. Choose the Classic II if you don't want to smoke food and all other grilling methods are enough for you. The Classic I is suitable for frequent grillers that don't need any extra features and grilling techniques.
